A yummy Potato Recipe

This is a great mashed potatoes recipe, however for being an appetizer I thought it would be something fun and new to try, however I really like them better as mashed potatoes instead of rolling them in cornflakes, maybe if the cornflakes were baked more on them? I don't know you try them and see....

CRUNCHY SWISS AND HAM APPETIZERS
2 c. very stiff mashed potatoes
2 c. finely chopped ham, cooked
1 c. (4 oz.) shredded Swiss cheese
1/3 c. mayonnaise
1/4 c. minced onion
1 egg, well beaten
1 tsp. prepared mustard
1/2 tsp. salt
1/4 tsp. pepper
3 1/2 c. corn flakes, crushed

Combine all ingredients except cornflakes. Chill. Shape in 1 inch balls and roll in corn flakes. Place on greased cookie sheet and bake at 350 degrees for 25-30 minutes. Serve hot. Makes about 8 dozen.
