Coconut pudding pie
This is so easy!
coconut pudding (instant) and 2 cups milk, mix well! then add 8 oz cool whip mix thoroughly then place in 2 baked pie shells refrigerate...this can also be doubled...
I topped it off with semi sweet chocolate chips...

Hiya Tina, great job! And it is so easy but if it is not a trouble at all, can you snap a pix of that instant coconut pudding? I am not sure if it is possible to find one here but I shall certainly look out for it.
The baked pie shells that you mentioned, do you still need to put them in the oven or just leave it in the fridge?

Well, I am not a coconut fan, but my pastor would love this. Our church has an annual fellowship and pie contest in the summer, and he always encourages people to bring plenty of coconut pies. :)

If you would like the more complicated version.
Brown crust (one of the pre-made frozen ones).
When cool, line bottom with banana slices
Cook Byrd's Custard with rum flavoring added (You can use vanilla pudding, but it should be the cooked kind).
When cool fold in bakers coconut.
Spoon over banana mixture
Top with whipped cream
sprinkle coconut on top.
Voila: One pirate pie
