Pistachio Cream Puffs
1/4 Cup water
2 TBsp. butter
1/8 tsp. salt
1/4 Cup flour
1 egg
2 Cups milk
1 pkg instant ( 3.4 oz) pistachio pudding mix
confectioners sugar optional

In a small saucepan, bring water, butter, & salt to a boil
Add flour all at once;stir until a smooth ball forms. Remove from the heat; let stand for 5 min. add egg; beat well. Continue beating until mixture is smooth and shiny.
Drop by rounded 1/4 cup 3 inches apart onto a greased baking sheet. Bake @ 400 degrees for 25-30 min or golden brown. remove to wire rack. immediately split the puffs open, remove tops and set aside. Discard the soft dough from inside puffs.
In a bowl whisk the milk and pudding mix for 2 min. Let stand for 2 min. or until soft set. just before serving fill each puff replace with tops. dust with confectioners sugar if you like... yield 4 servings...

Tuesday MERRY CHRISTMAS going to moms for Brunch then later on will have ham sandwiches there....
Wednesday Friend will be here doing christmas with us and later Brother and his family will be here for dinner, BBQ beef sandwiches, french fries, salad, cookies for dessert
Thursday spaghetti, garlic bread, corn
Friday handmade pizza
