2 Great RECIPES

Ground Beef 'n' Biscuits


SERVINGS: 6

TIME: Prep: 20 min. Bake: 20 min.

Ingredients:

  • 1-1/2 pounds ground beef
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 2 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/4 teaspoon dried oregano
  • 1/8 teaspoon pepper
  • 2 cans (8 ounces each) tomato sauce
  • 1 package (10 ounces) frozen peas
  • 1 tube (7-1/2 ounces) refrigerated buttermilk biscuits
  • 1 cup (4 ounces) shredded cheddar cheese

Directions:

In a large skillet, cook the beef, celery and onion over medium heat, until meat is no longer pink; drain. Stir in the flour, salt, oregano and pepper until blended. Add tomato sauce and peas; simmer for 5 minutes.
Transfer to a greased 13-in. x 9-in. baking dish. Separate biscuits; arrange over beef mixture. Sprinkle with cheese. Bake, uncovered, at 350° for 20 m
inutes or until biscuits are golden brown and cheese is melted. Yield: 6 servings. Editor's Note: The cost per serving does not include optional ingredients such as garnishes. When there is a choice of two ingredients, the cost is figured with the first one listed.

Saucy Seafood Pizza


Yield: 10 servings

1 (8 ounce) package refrigerated crescent rolls
8 ounces cream cheese, softened
1 teaspoon dill weed
1 teaspoon grated lemon rind
1/2 cup cocktail sauce
1/2 medium cucumber, seeded and chopped
1/4 cup green bell pepper
4 ounces flaked or leg style imitation crabmeat, coarsely chopped
1 tablespoon minced fresh parsley


Lemon slices; for garnish

Heat oven to 350 degrees F.

Unroll crescent dough; separate into triangles. Arrange triangles in circle on greased 14 inch pizza pan, with points toward the center and wide ends toward the outside. Pat out dough to 12-inch circle with fingers, pressing seams together to seal. Bake 12 to 15 minutes or until golden brown. Remove from oven; cool completely.

In medium bowl, combine cream cheese, dill weed and peel; spread mixture evenly onto crust. Top with cocktail sauce. Sprinkle with cucumber, bell pepper, crabmeat and parsley. Garnish with lemon slices, if desired. Cut into wedges to serve.

This is an easy recipe and a great alternative to cookies! So simple any child could make them! Take a ritz cracker spread peanut butter on it then top with large marshmallow. pop in oven on broil and watch them closely! ( Before baked)
( after baked) They should look something like this when finished! The marshmallows taste like an open fire made them! These disapear quick whenever I make them! Enjoy!

Vermicelli Ham Bake
1-1/3 Cup water
1 Cup milk
1/4 Cup butter, cubed
1pkg ( 4.8 oz) parmesan rice and vermicelli mix ( I just used chicken vermicelli rice)
1 Can ( 15-1/4 oz) whole kernel corn, drained
1-1/2 cups frozen cut green beans thawed
1-1/2 cups fully cooked ham
1 can mushrooms, drained
1/2 cup french fried onions, crumbled and divided ( I tried using the cheddar one, yum)
In a Large saucepan, bring water to a boil. Stir in rice with contents of seasoning packet. Return to a boil. Cook uncovered, for 5-6 min. or until rice is tender. Stir in the corn, beans, ham, mushrooms and 1/4 cup onions.
Transfer to a greased 2- qt. baking dish; sprinkle remaining onions around the outer edges. Cover and Bake 350 degrees for 30 min. uncover bake 10 min longer or till heated through.
This is one of the items I made last week and oh so yummy! Even my picky eaters liked it;)

Menu Plan Monday and Recipes!

Hello Everyone! For more menu planning check out Laura

Sunday- Cabbage Roll Casserole, pea salad, black olives for those interested, and butterscotch brownies for dessert.
Monday-BBQ Chicken on the grill,potato salad, spanish rice, zucchini and carrots cooked in olive oil.
Tuesday- going out to dinner with another couple
Wednesday-Chili and crackers
Thursday- Vermicelli Ham Bake, apple sauce and chocolate chip muffins
Friday- pizza

Butterscotch Brownies
1/4 Cup butter
1 Cup brown Sugar
1 egg
3/4 Cup Flour
1tsp. baking powder
1/4 Tsp. salt
1/2 Cup chopped nuts
1/2 tsp. Vanilla
preheat oven to 350 degrees. Grease a 8 or 9 inch pan. Melt butter and brown sugar in saucepan:cool to warm. Add egg and beat well. Add flour, baking powder and salt; mix well. Add nuts and vanilla. Bake 20 - 25 min. Cut while warm.
** if doubling recipe, use a 9 x 13 pan and bake for 30 min.**


Crunchy Pea Salad
1 Package ( 16 oz) Frozen peas, thawed
1 can ( 8oz) sliced water chestnuts, drained
1/2 Cup diced radishes
1/2 Cup diced sweet red pepper
1/3 cup red onion
1/3 Cup reduced- fat mayonnaise
1tsp. dill weed
1/2 tsp garlic salt
1/2 tsp. poppy seeds
In A Large serving bowl, combine peas, water chestnuts, radishes, red pepper and onion. In a small bowl, combine the remaining ingredients. Pour over vegetables and toss gently to coat. Cover and refrigerate until serving. Yield 6 servings
please note I did NOT put the chestnuts in this salad as we do not eat them here,I did however add a little bacon in it! This was wonderfully delicious! Even for me and I normally do not like peas!

Cabbage Roll Casserole

Ingredients...
  • 2 pounds ground beef
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 2 cans (15 ounces each) tomato sauce, divided
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dill weed
  • 1/2 teaspoon rubbed sage
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon cayenne pepper
  • 2 cups cooked rice
  • 4 bacon strips, cooked and crumbled
  • 1 medium head cabbage (2 pounds), shredded
  • 1 cup (4 ounces) shredded part-skim mozzarella cheese
This is a very yummy casserole! If you like cabbage rolls you will love this! We all did!

HOT DOG CASSEROLE
6 hot dogs cut up
9 oz frozen peas
small onion finely chopped
3 nice size potatoes chopped up pretty small
1 can cream of chicken soup
1 can milk
2 tbs butter, salt, pepper, garlic powder to taste
mix 1st 4 ingredients
then mix the other ingredients really good separately, then mix all together and bake in a 9x 13 dish cover and bake 350 degrees till potatoes are cooked and tender...
Cheeseburger Paradise Soup
6 medium potatoes
1 small carrot
1 small onion
1/2 green pepper
2 tbsp. chopped seeded jalopeno pepper
3 cups water
2 tbsp plus 2 tsp. beef granule
2 garlic cloves
1/8tsp pepper
2 lbs ground beef
1/2 lb sliced fresh mushrooms
2 tbsp butter
5 cups milk
6 tbsp. flour
1 pkg (16 oz) velveeta cheese, cubed
crumbled cooked bacon
In a soup kettle, combine the 1st nine ingredients, bring to a boil. Reduce heat:cover and simmer for 15-20 min. or until potatoes are tender.

In a small bowl,combine flour and remaining milk until smooth; gradually stir into soup. Bring to a boil cook and stir until thickened; stir in cheese until melted. Garnish with bacon
YIELD: 14 servings(about 3- 1/2 quarts)
