30 gingersnaps
2 Tbsp. plus 1/2 Cup sugar
2 Tbsp. cornstarch
2 Tbsp. cold water
3 Pints of Blueberries
whipped cream and or ice cream
In a blender at high speed, grind up gingersnaps with 2Tbsp. sugar until fine crumbs form.
preheat oven to 350 degrees F in a 9- inch pie plate, stir crumbs and melted butter together with a fork until moistened. Press mixture with your hand onto the bottom and up the sides of pie plate. Bake crust 8 min. cool on wire rack....
meanwhile in a 2 quart saucepan, mix cornstarch with water until well blended. Add half the blueberries and 1/2 Cup sugar and bring to a boil over medium high heat, pressing blueberries against the side of the side of the saucepan with the back of a spoon. Boil 1 min.. stirring constantly. Remove saucepan from heat: stir in remaining blueberries.
Pour blueberry mixture into crust. Cover with plastic wrap and refrigerate until well chilled about 5 hrs. serve with whip cream and or ice cream....YUMMY!!! I used more blueberries then asked it was a little much but still very good with ice cream;) ENJOY!

Nice menu. The pie looks like a face. The blueberry part like glasses and the whipped cream like the top of the head. Okay, I'm weird - it looks good.

Yummy!!! Sounds like a great food week at your house!! I am on vacation, so nothing is planned for meal wise this week, whatever sounds good at the time, we will have!
Nice menu. The potatoes with all kinds of goodies in them sounds like a fun meal.
